Banana Bread

Sorry I haven't been posting here lately. I don't seem to have anything worth saying. I have been staying the same with my weight, which is better than gaining.
I thought I'd come out of the shadows to post a recipe I tried for Banana Bread. With autumn here it brings on cravings for some yummy baked goods, and this really hit the spot for me. It is whole wheat and sugar-free, but of course still has plenty of carbs, so don't go overboard!

Whole Wheat, Sugar-Free Banana Bread

2 C wheat flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
4 medium bananas
1 egg
1/3 C vegetable oil
1/2 C unsweetened orange juice

1) Preheat oven to 350 F and grease 1 loaf pan.
2) Combine dry ingredients in a large bowl.
3) In a medium bowl, mash bananas with the egg, oil, and orange juice. A potato masher works well for this, or you can use a blender or food processor if you prefer.
4) Pour wet ingredients into dry ingredients and stir until combined.
5) Pour into greased pan and bake for 40-50 minutes, or until a knife inserted in the center comes out dry.
6) Cool on wire rack--- (or burn your mouth on a slice straight from the oven ;)

[the original recipe also called for 1/2 C raisins and 1/2 C walnuts added to the batter. I didn't add them, but the option is there if you like]
